Dinner

Normally my day finds we quickly thinking what I can get to the table in 20 minutes or less. I know my husband misses the days where I spent at least on hr on dinner every single day. I miss it sometimes, but most times all I can think is...what's left in the fridge and what can I do with it. We still eat pretty healthy comparatively. We eat vegetarian several times a week, not only is it good for us, but it saves alot of money. I grew up eating healthy to the extreme, so I know all the food combinations you need to make complete proteins etc. Thanks mom!

Tonight my pastor and family are coming over for dinner. Our church is in the middle of a Daniel Fast. Which my family is participating in, but not the eating part. We are fasting other things. So, tonight I get to step out and cook like I haven't for a long time. I've had the most fun getting food ready. It has turned into a mediterranean feast. I'm making this amazing vegetable medley that you roast in the oven with olive oil and spices. I'm also making a gorgeous spaghetti squash, which is one of my personal favorites. I'm making a thin lentil soup for a starter. I've got a beautiful herbal tea and water with lemon wedges. For desert a platter of fruits...fresh pineapple, tangerines, cherries...I can't wait. When my husband and I were first married we were pretty much granola folk. We ate fish or chicken once in awhile. So, this is a blast from our past.

I'm tempted to pull out my birks and my favorite tie dye dress packed away in a box labeled...the past. Then I realize that I weight about 100 lbs more than I did then, so it wouldn't fit anyhow. :) Despite the changes in my life I wouldn't go back for anything. I like this crazy life I've been given.
